Start the day with super nutrients

Let’s talk about boosting nutrients in everyday meals.
I know for myself I am really eager to get as many naturally derived nutrients (all good based) into every meal and especially now as we get closer to the end of the year, our schedules are all a little busier and we need to feel our best.
Ok, so our schedule today began at 6am and as many households it’s a race out the door juggling school lunches, breakfasts, brushing hair and teeth, ensuring everyone has what they will need for the day and can leave the house on a positive note…! This morning we nailed it, I myself had a beautifully hydrating tea with bötanica wild Original and also managed to add a spoonful of bötanica wild vitality into the baby’s oatmeal which provides her with a sustaining health throughout her busy day and me a sense of comfort knowing I have given her the best available for her health.

I love the convenience of adding a couple spoonfuls of the superfoods where I see fit bit what I am really passionate about is using the superfoods and other products in my daily routine, like in my Mediterranean bruschetta. I’ll add my recipe in below for you to enjoy but do feel free to add and subtract with your preferred ingredients to make it your own, we would love to hear your favourites!

My two go-to hacks here are making the olive tapenade and the pesto with superfoods to enhance the flavour, quality and you guessed it - the nutritional profile of these ingredients. Mine last in the fridge for the better part of two weeks until they’re all gobbled up on eggs, leftovers, get the picture.
The fact that I have made these ingredients and understand what is in them gives me a boost just in knowing. These two foods are so great for you in themselves, plus I am able to simply and quickly add in a massive amount of nutrition just by adding a couple spoons of the bötanica wild superfood range is a bonus. A massive bonus!

Mediterranean Bruschetta with White Anchovies
This recipe is for one serve - simply double every portion as per how many people you’re catering for, enjoy!
We use all locally sourced and organic ingredients where possible.

1 piece toast of your choice - we’ve used a gorgeous local sourdough today

1/4 grilled fennel, we charred fennel on the bbq using olive oil and salt, then left inside the bbq after cooking to be soft throughout
Handful of leafy greens and herbs
1/4 cup ripe tomatoes
1/4 cup finely diced red onions, with a splash of red wine vinegar
8 white anchovies
Sprinkling of toasted slivered almonds to plate

(Place into your high powered blender)
1 cup basil leaves
1 cup rocket leaves
1 clove garlic, peeled
Juice of one lemon
1 tbs bötanica wild vitality
Pinch salt and black pepper
1/2 cup soaked nuts - we used cashews
Blend wile slowly adding a good quality extra virgin olive oil to loosen the mixture until it forms a smooth vibrant green paste

Olive tapenade:
Place into a large mortar and pestal a clove of garlic 1 tablespoon of bötanica wild Radiance, and a pinch of salt, and grind until a smooth paste is formed. Add in two cups of kalamata olives, (we have the kalamata in olive oil without seasoning) and crush into beautiful paste. You can add a squeeze of lemon juice afterwards, or adds flavour and helps keep it fresh in the refrigerator.

Generously smooth the olive tapenade onto the fresh warm toast.
Plate the toast in the centre of the plate, adding the vegetable and anchovy toppings decoratively on top.
Place four generous spoons of the pesto on the plate, and add some toasted slivered almonds on top for extra crunch.
